The place, opened by one of the old Tabu owners, still serves margaritas — tequila, fresh-squeezed lime, orange liqueur — for a reasonable $5, usually made by manager Felipe Romero. His recipe also goes in the sangria: red wine, brandy, pineapple, pomegranate, molasses, local wildflower honey, garnished with orange and cinammon. We talked to owner Jeven Showers. This feels different than Tabu, yet more approachable. What’s new here? I bought out my business partner. We had different visions. I did a full remodel and gave it new life and a new name. Tabu was a night club and restaurant. This is the traditional taqueria. There’s no music or dancing. The focus is on food. The focus is also on tequila. We’re going to have over 75 kinds by our grand opening on Cinco de Mayo. The focus is on lunch and dinner, not on how many shots you can drink.  Your menu seems extremely reasonable for downtown in this upscale tourist economy. How are you doing this? The focus is on family. We want to be the taqueria where your friends with children want to come. It’s for locals first. The prices are low and the food is good because we want to be busy year round, not just in tourist time. Right now, the only other affordable places downtown are Ruby’s and Martolli’s. Now we’re here. The number of locals and workers who want this is greater than the number of tourists. You still have the bar in the back room. What’s it like? We transformed the bar to a more cozy, dim-lit romantic place, where you can come sit and hang out and have a conversation that you can hear, because there’s no music. We got rid of the booths and tables. It’s a cozy place for dates. You’ve been open a month. What are your best-selling dishes? Tacos, with homemade, non-GMO tortillas, meat, onion, cilantro, lime. Big bowls of beans, rice, cheese, lettuce, salsa, sour cream, guacamole, gluten-free for $5, add $2 for meat. Carnitas with pork slow cooked six hours. Al pastor, with pineapple.
