First there was Amuse, the fine-dining establishment on North First Street in 2000, then Mix, an artisan bakery on North Main Street. Next month, North says she will open a burger joint, appropriately called Flip, in the former Agave Mexican restaurant location at 92 N. Main St. "Amuse is from the French word 'bouche,' which means to tease the mouth," North said. "Mix was as in mixing things in a bakery and mixing when people gather together. Flip is just a great word to go with flipping burgers." In a town that spurns major fast-food franchises, North said, the time was right. "I think we have a need for good fast-service hamburgers with high-quality ingredients," she said. "I've had the concept in my mind for a while. When the opportunity came we took it." With just 600 square feet, the location is small, North conceded, but the atmosphere is right, with a couple of outdoor tables. Amuse employs as many as 20 and Mix has a payroll of 35, the owner said. Flip will employ 15. Flip's buns will be baked at Mix, where the ice cream for shakes will be made, as well. "We'll be serving Oregon beef and fresh-cut fries, too," she said. "It ties in well with Mix because it's just down the street."
