It has been more than 75 years since Wakefield baked that first batch of chocolate chip cookies, and this favorite has never lost its popularity among cookie lovers. It has been said Wakefield wanted to bake some of her favorite cookies but found there was no baker’s chocolate (not the brand name) on hand. She noticed a bar of Nestle’s semi-sweet chocolate and decided to chop it into small pieces. This probably added an unexpected feature to the cookies because the chocolate did not melt during baking. I can just imagine the smacking of lips when she took that first bite. As they say, “And the rest is history.” It wasn’t long before Nestle’s chocolate chips hit the market. Through the years, creative bakers have added their special touch to this classic, but the overall flavor has remained chocolate chip. When I was writing “A Treasury of Southern Baking,” published in 1993 by HarperCollins, I decided to include a section called the “Busy Baker.” This was for those who have to budget their time in the kitchen. Recipes in this section are easy to make and sometimes use mixes. Among those special recipes is my version of easy chocolate chip cookies. It is made using a box of pie crust mix. Very little measuring is needed because the mix already has flour and butter in it. When enjoying these, your family and friends will probably think they are made “from scratch.” Another unusual version of chocolate chip cookies is my Chocolate Chip Crescents. These are made using refrigerated ready-made pie crusts. These crispy treats coated with confectioners’ sugar will thrill chocolate chip lovers. They are not your usual drop cookies but a delicious variation. Quick Chocolate Chip Delights Ingredients: 1 box (11 ounces) pie crust mix 1/2 teaspoon baking powder 2 eggs 1 cup firmly packed light brown sugar 3/4 cup chopped walnuts 1 package (6 ounces) semi-sweet chocolate morsels Preheat oven to 375 degrees. Line cookie sheets with aluminum foil (or parchment paper). In a large bowl, combine the pie crust mix, baking powder, eggs and brown sugar. Beat until well mixed. Stir in walnuts and chocolate morsels. Drop from a teaspoon onto lined baking sheets, spacing cookies about 2 inches apart. Bake for 8 to 10 minutes or until lightly browned. Remove from cookie sheet immediately and cool on a rack. Chocolate Chip Crescents Ingredients: 1 box refrigerated ready-made pie crusts (2 per box) Melted butter 2 tablespoons sugar 2 tablespoons brown sugar 4 tablespoons miniature chocolate chips 1/4 cup finely chopped pecans Confectioners’ sugar for coating Unfold crusts and brush each with a light coat of melted butter. Combine sugars and sprinkle over crusts. Combine chocolate chips and pecans. Sprinkle over crusts. Using the fingertips, gently press chips and nuts into crusts. Cut each crust into 12 wedges (I use a pizza cutter for this). Roll each wedge starting at the wide end and rolling to point. Place on lightly greased baking sheet (or sheet covered with parchment paper). Bake at 425 degrees about 12 to 15 minutes or until delicately browned. As you remove crescents from baking sheet, roll each in confectioners’ sugar to coat. I sometimes like to give them a second dusting with the confectioners’ sugar.
