Today's Internet lists many cakes by that name, but none that I've found that compare to their original. I think it was near the pharmacy. No joke, every other Wednesday our boss brings in doughnuts selected and boxed with only one stipulation: "no pink." Although the few times a rogue cherry-frosted round has made its way near our desks, it hasn't gone to waste — our preference for sweets in pastel colors other than "light red" may explain why your beloved cake has slipped our memory. Champagne cake is described as a light and fluffy cake that uses bubbly in the batter. It's typically frosted in a pink buttercream frosting and filled with rum-flavored or Bavarian cream, and is often topped with coconut, chocolate or white chocolate shavings. We drew from the MT's newspaper archives and a collection of phone books that spans half a century, but there's a lingering possibility that our readers' memories are stronger than our resources. After scouring our archive database, the Phoenix bakery that best fits your recollection seems to be Blue Bunny Bakery, which we reviewed in 1998. The business was located at 138 S. Main St., Phoenix, in a 1909-built building that used to be a private home. The bakery featured an assortment of baked goods, coffee and espresso. In a March 1998 review, Cleve Twitchell raved about his apple turnover and the decor. The last phone book listing the business was the Qwest Dex phone book that expired March 2005.
