Ask Lisa: I need help substituting cake pans By Lisa Abraham More Content Now Jul 26, 2017 12:00 AM A A Q: I have a cake recipe that calls for a 12-cup tube pan. Can I make that in a 9-by-13-inch pan instead? — Eloise McCarty, Powell, Ohio A: Yes, the traditional 9-by-13-inch cake pan, assuming it is 2 inches deep, has a 15-cup capacity. A recipe meant for a 12-cup tube or Bundt pan should work fine in the rectangular pan. Pans need to be filled half to two-thirds full, and recipes are written to take that into account. Just be careful, though, because some tube pans actually have a 16-cup capacity, in which case your batter could runneth over. — Ask a food or cooking question by writing Ask Lisa at The Dispatch, 62 E.
