BUSINESS PROFILE Four & Twenty Blackbirds Bakery takes flight to new roost Comment By John Darling For the Tidings DailyTidings.com By John Darling For the Tidings Posted Jul. 24, 2015 at 6:52 PM By John Darling For the Tidings Posted Jul. 24, 2015 at 6:52 PM » Social News An Ashland staple for 27 years, Four & Twenty Blackbirds Bakery has sold to its third owner and moved down to A Street in the Railroad District (on the back of “the old Cantwells”) where it will continue to wholesale to major stores, but also open for breakfast, with plenty of organic, locally grown ingredients. The new Four & Twenty is owned and will be run by Shawna Hanan, who owned the Hemporium on East Main Street for seven years with her husband Al Hanan. She’s doing this project by herself while he runs the family farm on Old Siskiyou Highway. Q: What’s your vision for this space? A: It’s big, 1,400 square feet, instead of the 700 on Ashland Street (next to the defunct Beanery). We will still sell to the Food Co-op, Shop'N Kart, the Shakespeare Festival, the Grants Pass Farmers Market, Organicos in Medford. We want to do more retail. We got all the equipment from the old bakery plus their wonderful Irene, who baked there for 10 years. We hope to expand into Haggen, Medford Food Co-op and have distribution from Mt. Shasta to Portland with Organic Produce Distributors. Q: What do you bake? A: Pies, cakes, cookies, turnovers. We want to expand to sandwiches for lunch. We’re going to start serving breakfast here. We have a big, long farm table coming in. We’ll serve egg dishes. We have butter, eggs and jam coming off our farm, with as much organic and local as possible. Q: Location is so important. What about this spot on A Street by Oak, with little pedestrian traffic? A: We’ve already recognized that. We hope it grows on people. There’s parking. We’ll have Noble coffee. I also have a lot of herbalist skills and will cook with that. I have a great stinging nettle cake. Q: Tell us about yourself. A: We came from Washington state seven years ago when our first daughter was born. We have two daughters. I learned baking from my grandmother and have always loved cooking.
