So when I saw Jefferson Spirits — easily my favorite local watering hole — post a picture of wood-fired pizza in the Applegate the other week, I had to check it out. Tucked away on Highway 238 just across the road from the Applegate Store and Cafe, Peace of Pizza fills a sorely needed niche in dining on the fringes of the greater Rogue Valley. Jon Scales and his girlfriend opened up the small pizza place barely a year ago, after several years traveling around the United States. Scales is originally from Chicago, where pizza is something of a religion. "It's basically pizza and Michael Jordan," he said, laughing. At 12 inches, the thin-crust house pies are just big enough to serve three people, but our table ended up ordering a second because we enjoyed the first so much. Diners have the choice of one of a dozen specialty pizzas or building their own on a cheese base, starting at $13. We opted for a basic pepperoni with feta and roasted garlic, which came out perfectly gooey without too much grease. The crust was a pleasant change from some of the overly crisp wood-fired pies I've had in the past. While still nicely blackened and crispy on the edges, it gave just enough in the middle to allow each slice to easily fold in hand. As somebody who is constantly frustrated by some restaurants' insistence on using chunky, overly sweet sauce on thin-crust pizzas, Peace of Pizza's thinly applied but savory sauce was perfect for the style of pie, which, at the end of the day, is all about the toppings. Both the dough and sauce are made fresh in-house daily. While there's ample seating inside, with an interior that can be described only as cozy, the real reason to head to Peace of Pizza is the outdoor seating in the garden, which offered a perfect escape from the hazy congestion of downtown Medford on a sunny 85-degree day. Scales said the property was nearly abandoned when they signed the lease. "We want to keep it a little bit punk rock," he said, saying the only building improvement they made was adding the wood-fired pizza oven to the kitchen. In addition to pizza, the restaurant also has a full line of sandwiches and salads, made with local greens, and offers a variety of craft beer in bottles and cans and wine by the glass. Scales said they're planning to have a tap system for beer added within the next few months. Peace of Pizza is open from noon to 9 p.m. Wednesday through Sunday and is at 15090 Highway 238, Applegate.
