Owned by the same couple who started Ruby’s four years ago — Christian Senf and Aura Streett — Gil’s has the same values: locally sourced, organic and affordable and allows you to tote beer, wine and food back and forth between the spots. They serve regional wine by the glass or bottle. Gil’s has the same open, fun, friendly seating outdoors that you find at Ruby’s and is turning out after two months to be just as popular as Ruby’s, if not sort of an extension of it. What makes these spots a hit? Senf: We concentrated on locals for both, not tourists. You come by here and you see your friends and neighbors. I was looking to fill another niche in town, as with Ruby’s. It’s not the first growler station in Ashland but it’s the first dedicated growler fill and bottle station. That means we’re not a brewery and we carry any craft beer on tap, and you can also buy bottles of beer to go. The selection of tap beer rotates a lot. It’s $10 to $15 to fill a growler. That makes it about retail price for you, not bar price. Pints are $4 to $6.50. We’re strictly craft-oriented, no Bud or Coors. You go beyond beer on tap. Senf: Yes, we have the hard cider, meade and kombucha, all local or regional. They’re very popular. Kombucha has a trace of alcohol, about .05 percent. You couldn’t get enough of it to get a buzz. As for wine, you can get a bottle here and take it to Ruby’s for dinner with no corkage fee. And the food? Senf: We have a dual kitchen with Ruby’s. The entire Ruby’s menu is available here. Plus we have our own — great nachos with our custom cheese sauce, slow roast chicken, rice bowl with black beans, tabouli with local quinoa, egg salad sandwich, chicken salad sandwich. Our produce is all organic, from Blue Fox in the Applegate. Our bread and pretzels are from Sunstone Bakery in Ashland. It’s a beautiful, open space inside, with four seats at the bar. Senf: Yes, we gutted this house over two years and put in a vaulted ceiling, myrtlewood floor and bar from Coquille. Tell us about you? Senf: I’m from Virginia. Aura is from Arkansas. We have two toddlers. We came here in 2011 from Wyoming, where we’d got tired of the hard winters. We wanted a place with a mild climate and lots of outdoor activities.
