This longtime vegetarian has penned a book to take people step-by-step to finding a more healthful lifestyle with nutrient-packed meals. It features a 30-day program to wean one off the meat-heavy standard American diet. There are also 50 recipes. Slabosz offers tricks for finding enough protein in plant-based options, as well as advice on navigating tough spots and cravings and tips on how to deal with group dinners and ordering at restaurants. Grilled Mushrooms on Rye with Fresh Tomato Salsa and Creamy Horseradish Sauce 8 slices of dark rye bread, toasted Bunch of fresh snow pea or alfalfa sprouts For the garlic mushrooms: 1 pound portobello mushrooms 3 tablespoons olive oil 3 garlic cloves, minced 1–2 teaspoons chili flakes (optional) 2 teaspoons fresh thyme leaves Salt flakes and cracked pepper 1 tablespoon sunflower oil For the cherry tomato salsa: 7 ounces cherry tomatoes, sliced 1⁄2 green bell pepper, finely diced 2 teaspoons finely diced red onion 1–2 tablespoons torn fresh basil leaves Pinch of raw sugar Salt flakes and cracked pepper, to taste For the horseradish sauce: 3⁄4 cup silken tofu 2 tablespoons lemon juice 1⁄2 teaspoon brown sugar 1 tablespoon walnut oil or olive oil 1–3 teaspoons fresh horseradish or horseradish cream, to taste Salt flakes and cracked pepper, to taste To prepare the mushrooms: Slice the mushrooms into thick (approximately 1⁄3-inch) slices. Place the mushroom slices in a single layer in a large shallow container, drizzle the olive oil on top, along with the crushed garlic, chili flakes and fresh thyme. Season with salt flakes and fresh cracked pepper, to taste, and then toss to coat evenly. Cover and set aside in the refrigerator while you prepare the remainder of the ingredients. To make the salsa: Combine all the ingredients together in a small bowl and toss well, adding salt flakes and cracked pepper to taste. Set aside in the refrigerator. For the horseradish sauce: Place the silken tofu, lemon juice and brown sugar in a food processor. With the motor running, add the oil until the tofu becomes a smooth cream. Add a little of the horseradish at a time, adjusting to taste, and finish with a little pinch of salt flakes and cracked pepper. Set aside in the refrigerator. To cook the mushrooms, heat a small amount of the sunflower oil on a grill, griddle or heavy frying pan. Grill the mushrooms in small batches over medium-high heat until golden on both sides. Set aside and keep warm while you cook the remainder. Assemble the sandwich by spreading all slices of toasted rye with the horseradish sauce. Top each of the four slices with sprouts, a nice stack of grilled mushrooms and spoonfuls of salsa, and finish with the second slice of rye. Variations: If using fresh horseradish, reduce the amount, adding a little at a time. Alternatively, try whole-grain mustard. Use arugula or cress in place of the sprouts if you prefer.
