TonTon's Artisan Affections, which specializes in items such as made-from-scratch hummus, grain-free cookies and chickpea crackers, plans to set up shop at 109 Talent Ave., the former location of Inti Mexican restaurant. "Over the next few weeks, we are going to be slowly opening the doors," says owner Michael Antonopoulos, adding the company is shooting for an official opening in March. The space has been undergoing renovations since October. It offers an 800-square-foot kitchen — more than double the size of its previous location at 201 E. Wagner St. — and a 1,200-square-foot storefront where the market will be located. "It's drastically increased the quality of our old production space," Antonopoulos says. "We'll be expanding our gluten-free offerings. Our kitchen is actually more of a bakery, geared toward higher production." A Facebook post by the company says the space will be called TonTon's Community Casbah. "Our goal is to create a community hub that supports all our health, local collaboration, co-creation and regional prosperity," the post says. TonTon's began selling its foods in September 2012. Since its start, community public offerings have helped carry the vision. It's a mechanism that remains available through Hatch Oregon, Oregon's public offering program. Under the program, an individual can put as much as $2,500 into a company or start-up that has registered with the state and paid a $200 fee. Those companies can receive investments of up to $250,000. They are required to produce 80 percent of their revenue within Oregon.
