For the past couple years, Jefferson Spirits has filled Medford's cocktail niche and scotch tumblers on its own with an ever-changing assortment of elixirs made from house-infused liquors. But now a new watering hole with a new niche is is in town. Immortal Spirits tasting room, 141 S. Central Ave., next to Paisans Pizzeria, has a smaller selection of cocktails than Jefferson Spirits, but what's exciting is that most of the liquors and mixers on the menu are made in Southern Oregon in small batches. For the purist more interested in the craft of the spirit than its infusion, there's a lot to be excited about in Immortal Spirits' arrival. I first wandered in to the woody and clean tasting room last week, curious about their lunch menu. A choice of three hot sandwiches and four burgers are on the menu. Seeking something hearty but not necessarily heavy, I went for the "Ultimate Warrior" sandwich ($9), which grills sourdough with turkey, pesto, tomato and mozzarella. I found the sides of house-made potato salad and green salad to be a refreshing alternative to fries, although I'd like to see the sandwich offered as a panini in time. Because it was the middle of my workday, I tried the ginger ale ($3), one of the two soda choices on the menu by From the Earth Soda Company in Ashland. The soda had a typically strong ginger flavor that would work well in a Whiskey Ginger, but it stood well on its own. Sampling spirits is new to my palate, but I felt I'd be remiss if I didn't try some of Immortal Spirits' namesake products. On my day off, I visited again to try its approach to an Old Fashioned ($12), along with the Crostini of the Day ($7). It was during this visit that I was really able to appreciate the place. The cocktail mixed Immortal Spirits' Early Whiskey, made from local barley and aged for two months in Oregon oak, an orange slice, a cherry and house-made bitters that start with Immortal Spirits' moonshine infused with cherries and other flavors. The combination was drier than I expected, but the whiskey had a strong earthy flavor, and I found the cocktail enjoyable. Sweeter options are on the menu. The crostini of the day, topped with ricotta cheese, lemon zest, honey and sea salt, was three parts sweet and two parts savory, and paired really well with my cocktail. The combination of flavors reminded me of the sweet, but not too-sweet ricotta-based cannoli in Boston's Little Italy. Immortal Spirits and Distilling Company's tasting room is open from 11 a.m. to 8 p.m. Mondays through Thursdays and 11 a.m. to midnight Fridays and Saturdays.
