As strange as it might seem to those of us who grew up using it most often for sandwiches, mayonnaise is now being used as an ingredient in baking. After all, if we stop and think about what goes into mayonnaise, we can understand why it can be substituted for some of the ingredients in cakes, cookies, etc. The two basic ingredients in mayonnaise are oil and eggs. I now use mayonnaise when I am out of the egg for my Southern cornbread. It actually gives the cornbread a great texture. The following recipe is made in a 7-inch iron skillet, but if you like a thinner cornbread, you can use a 10-inch iron skillet. Personally, I prefer the thinner version because I like the crust better than the inside of the bread. A few years ago, a friend brought some cookies to a church event and wanted me to taste them. She didn’t tell me what her secret ingredient was, and I was surprised when she said they were mayonnaise cookies. This easy-to-make cookie recipe calls for self-rising flour, but if you only have all-purpose flour, add 1 tablespoon of baking powder and a teaspoon of salt to the 2 cups of all-purpose flour. I sometimes add pecans to this easy four-ingredient recipe, and they taste a lot like a popular brand of pecan shortbread-type cookies: crisp but not too sweet. You can also make a chocolate chip version by adding half chopped pecans and half miniature chocolate chips. When using mayonnaise in a baking recipe, be sure to choose a good brand of mayonnaise. It does make a difference. Better yet, use homemade mayonnaise. When I first started cooking, I never tried to make mayonnaise because I was sure it was much too difficult for an amateur cook. However, it is easier than I thought as long as the recipe is followed closely. Easy Pecan Shortbread Cookies Ingredients: 1 cup mayonnaise 1 to 1 1/4 cup sugar (I prefer the 1 1/4 cup) 1 teaspoon vanilla extract 2 cups self-rising flour 1 cup chopped pecans Heat oven to 350 degrees. Combine the mayonnaise and sugar. Beat until creamy. Add vanilla extract, flour and nuts. Mix well. Roll into small balls and place on an ungreased cookie sheet (or a parchment-lined cookie sheet), spacing cookies about 1 1/2 inches apart. Press with fingertips to flatten slightly. Bake for 10 to 12 minutes or until lightly browned around the edges. Allow cookies to cool on pan for about 1 minute. Cool completely on rack. As the cookies cool, they become more crisp. Mayonnaise Cornbread Ingredients: 1 1/4 cup self-rising cornmeal mix 1/3 cup self-rising flour 1/4 cup mayonnaise 1 cup buttermilk Preheat oven to 450 degrees. Generously grease a 7-inch iron skillet (or 10-inch, if you like it thinner). When using the 7-inch skillet, the cornbread is about 1 1/4 to 1 1/2 inches thick. Combine all ingredients and mix well. Pour into prepared skillet. Bake for 20 to 25 minutes for the 7-inch skillet and 18 to 20 minutes for the 10-inch skillet. Remove from skillet immediately. NOTE: If you choose to use homemade mayonnaise and use the recipe in my latest cookbook, “Simply Southern and More,” please note that there is a typographical error in the amount of salt. It should be no more than 1/2 teaspoon of salt, not a teaspoon as stated in the recipe. You might want to start with 1/4 teaspoon and then add a little more, if desired.
