Medford to get its second Quizno's shop The owner of the first Quizno's sandwich shop in the Rogue Valley is about to become the owner of the second. And, he says, there are more to come. Within the next few days, Gene Copley will open his second Medford store at 55 E. Stewart Ave., adjacent to the new Staples store. His first Quizno's is at 1380 Biddle Road. The Italian-style sandwich shop features submarine sandwiches, soups, salads, drinks and desserts. Copley, who grew up in Talent and graduated from Phoenix High School, said he hopes eventually to have five Quizno's in Southern Oregon. He plans to open one each in Ashland and Grants Pass and is considering Klamath Falls. His Biddle Road store opened in October 1997. Each store in Medford will operate with 14 employees. Quizno's is a franchise operation based in Denver, Colo. There are about 600 franchise outlets in the United States and Canada. Copley said the configuration of the franchise agreement attracted him to the business. "I was looking for something that would be not just a good job, but a good investment," he said.
