What do you offer? What makes you different? We are a totally gluten-free bakery, with espresso and coffee, all of it screened for gluten. We don’t let gluten come in the shop even in coffee or flavorings, so there’s no cross-contamination. What’s wrong with gluten and what is it? Gluten is a protein found in wheat, rye and barley. It’s used to give elasticity and fluffiness to baked goods. It’s in all kinds of things. We get on the phone with companies to make sure it’s not in what we use. Lots of people have celiac disease. We also have some items that are egg-free or dairy-free, for people sensitive to those. What’s in the case today? Blueberry scones, mini-cinnamon rolls, zucchini muffins, apple-pumpkin muffins, macaroons, peanut butter cookies, lemon pound cake, lemon-poppyseed muffins, oatmeal-chocolate chip cookies, banana Nutella muffins, jalapeños cheddar and bacon corn muffins, ice-cream cone cupcakes (a cupcake actually stuffed in a cone, very popular). We always have at least 15 different items. You’ve been open a few weeks. How’s business? Not too bad. It’s a matter of people finding us. For me (Kris) personally, it’s been great going gluten-free. Since the first of the year, I’ve lost 20 pounds, 40 blood pressure points and my depression and brain fog is gone. My face hurts from smiling.   These gluten-free cookbooks you sell? And the board games? Yes, Lizzie wrote those and created all those recipes for her senior project at Ashland High School. They’re $8.
