They’re franchised by the corporation in Boise, but are dedicated to providing healthy fare with all-you-can-eat veggies piled on top of meat, eggs, hash browns or cheese — or just vegetarian-vegan if you want.  What is pita and why is it popular? It’s a type of low-cal pocket bread, with three ingredients, no preservatives. You open it up, fill it with meat and veggies, and roll it closed. It’s popular because it’s fast and it’s on the healthy side of fast food and it’s affordable, $5.95 to $7.20. We have a small one for $4.65. It looks like people get to custom order. How do you do that? It all depends on you: what you want. If you want it all spinach and potatoes, you can have it. You get a single or double of the basics — meat, eggs and so on — then you can add as much veggies as you want. Don’t some people go for it and really load it up? Sometimes they make it giant, but it works out. They get as much topping as they want and we have 37 sauces to go on it. How is business? We’re doing good, about where we thought we’d be now. The remodel of the Siskiyou Boulevard shop was a big job. We had to put in all new wiring and plumbing. Tell us about yourself. I’m from Los Angeles. Nicole is from Grants Pass. We have three children, two in Ashland Middle School and Bellview, one pre-school. My dad is Robert Kendrick, the developer. He was construction manager, pro bono for the SOU Visual Arts building and I worked on the construction. He has a plaque there, honoring him as Citizen of the Year.   The downtown Pita Pit is at 145 East Main. Its hours are: 11 to 8, Sunday-Wednesday and 11-3, Thursday-Saturday. The college shop is at 1259 Siskiyou Blvd., open 10-10 weekdays and till 3 on weekends. You order at the counter. There are some tables in the restaurant.
