The restaurant will be built at 1968 Crater Lake Highway on one acre on the north side of the mall, the former site of a Shell gas station. Reising said demolition has started on the gas station, and he said In-N-Out should be ready to start construction later this spring. In-N-Out recently received approval from the Medford Site Plan and Architectural Commission and has applied for building permits. In-N-Out’s application calls for a 3,750-square-foot building with 51 parking spaces that is similar in style to its other restaurants, featuring white stucco, a red tile roof and its logo. According to documents filed with the city, the value of the building is $853,905 and the value of the equipment is $386,095. The In-N-Out franchise would be the first the company has located in Oregon; the closest location to Jackson County is in Redding, Calif. Representatives from In-N-Out recently told the city that they hadn’t opened a location in Oregon because of supply chain issues. Now the company has set up a distribution facility in Northern California that will also serve Medford. Reising said In-N-Out will start building before the end of summer. In-N-Out representatives have said previously that they expect it to take four to five months to build the restaurant. The restaurant chain has 303 locations in California, Nevada, Utah, Arizona and Texas. The first In-N-Out opened in 1948 in Baldwin Park, Calif., and it was a popular chain in Southern California for many years before branching out to other locations.
