I see there’s a construction project near the north Medford freeway interchange next to the Shilo Inn on Biddle Road. I believe that’s where IHOP used to be before it was torn down to make room for progress. Can we hope to see IHOP reappearing in Medford? — Joshua Harris, Medford It’s been more than 15 years since the International House of Pancakes was among 11 businesses uprooted when ODOT refashioned the north Medford freeway interchange. Most likely a sizable number of people who now call Medford home are unaware of the pancake house’s previous incarnation. But while we are indeed getting the next generation IHOP, it won’t be at the old site. Instead, a 4,485-square-foot restaurant is in the works at 1383 Center Drive, near the new Holiday Inn Express hotel, across from the south Medford Walmart. Rock Creek Enterprises applied for permits in August for a building valued at $628,179. Two general contractors remain in the mix for the project, Pickett Mountain Construction of Grants Pass, and Kugel Corp., of Chehalis, Washington. As for the project you’ve seen on the north end of town, at 2233 Biddle Road, a 2,500-square-foot Arby’s is taking shape near the old IHOP location. You may recall there was an Arby’s about a block south on the other side of Biddle Road, next to Pizza Hut, for many years, before it was shuttered.
