Red Robin opening delayed til July THE VALLEY Burger lovers will have to wait an extra month-and-a-half for Red Robin to hit Medford. Soil difficulties at the construction site on the corner of Biddle Road and Jackson Street have delayed the restaurant's projected opening until July 2, franchisee Greg Hubert said Thursday. "That (construction) pad needed some more compaction and stuff," he said. "It delayed things about a month." On Wednesday, a company spokeswoman listed the projected opening date as May 17. When finished, the restaurant will employ about 125 people, Hubert said. He said hiring efforts would begin in April.
