Jeffrey Gillespie: Hillary Clinton’s big night ... 5 things to know about listeria, in light of the Blue Bell recall Comment Posted Apr. 21, 2015 @ 10:47 am Ice-cream manufacturer Blue Bell announced earlier today that it will be recalling all of its products from stores nationwide after a listeria outbreak in Texas and Kansas was traced back to Blue Bell ice cream. After an initially smaller recall, the company said it decided to pull all of its products after some tests of chocolate chip cookie dough ice cream tested positive for the bacteria. So far, three people have died and five other people have gotten sick after eating the ice cream. The company’s CEO and President Paul Kruse said Blue Bell will take steps to ensure all products are safe before they go back on sale. What should you know about listeria? Read on: 1. What is listeria? Listeria is a type of bacteria that can be found in soil and water as well as in animals like cows. The bacteria can be found in raw milk and products made with raw milk, like ice cream. Unlike other germs, listeria can thrive even at cold temperatures. The only way to kill it is via high temperatures (i.e. through cooking or pasteurization). (Photo: Flickr, AJ Cann) 2. What are the dangers? In the U.S., listeria affects around 1,600 people per year, and approximately 16 percent of all cases are fatal. Listeria can cause short-term symptoms like high fever, nausea, abdominal pain, diarrhea and severe headaches. It’s also important for pregnant women to know that listeria can cause miscarriages and stillbirths. (Photo: Morguefile, Stockarch) 3. Who is most at risk? People most at risk for becoming sick after coming into contact with listeria include older adults, young children, people with weakened immune systems and pregnant women. People with certain diseases — including HIV/AIDS, cancer, alcoholism and diabetes — are also at an increased risk. 4. How is listeria treated? People who believe they may have come into contact with listeria — or are exhibiting the symptoms listed above — should contact their doctor as soon as possible. If antibiotics are given promptly, they can cure the infection and prevent the infection of a fetus in a pregnant woman. 5. How can it be prevented? Make sure when you’re cooking to wash your hands, knives, countertops and cutting boards after you handle undercooked foods. It’s also important to make sure you rinse raw produce before eating it, and to keep uncooked foods like meat and seafood separate from your other food items.
