The modest German biochemist received the Nobel Prize for Medicine in l9l0, but downplayed his contribution to our knowledge of cellular physiology. His greatest gift to the common people, he insisted, was his invention of the Kossel Sandwich. Albrecht was born in Rostock in 1853. He attended the University of Strasbourg then earned an MD from the University of Rostock in 1878. His forte was teaching and research so he spent his life lecturing and conducting research at several colleges. In 1901 he was recruited by Heidelberg University, the most prestigious assignment in German academic circles. He held that post until his death in 1927. Founded in the 14th century, the famous school was one of the four most important institutions of higher learning in the Western World. The others were Oxford in England, The Sorbonne in Paris, and Salamanca in Spain. Kossel's body of work was the physiological chemistry of human cells. He learned that cells are a combination of proteins and amino acids. In 1896 he discovered and isolated the amino acid histidine. Many experiments later Kossel identified thymic acid and agmatine. He earned a number of honorary doctorates from European Universities and membership in the Swedish Academy of Science. As his fame spread in scientific and academic circles, students came to Heidelberg from around the globe to study with Dr. Kossel. One was a young American, Edwin B. Hart. Having learned Kossel's scientific methodology, Dr. Hart returned to the US to launch his own scientific research. Hart discovered that goiter, still common in the early 20th century, was caused by an iodine deficiency in our diet. Goiter is rarely seen today except in Third World countries. Goiter is an enlargement of the thyroid gland in the front and sides of the neck. It is dangerous when the enlarged mass puts pressure on the esophagus and turns the victim into a bloated gargoyle. Hart found a process to add iodine to table salt, an inexpensive and effective way to prevent goiter. Iodized table salt is now common everywhere. Another student who came to study with him was the English scientist, Dr. H.D. Dakin. Together, they investigated the way the body transforms proteins, and their effect on urine. Too much uremic acid leads to jaundice and gout. They found a linkage between these illnesses and diet. Their discoveries are part of the curriculum at every medical college. Albrecht did not live long enough to see the destruction of his beloved Heidelberg University. The school motto was "To the living spirit." Hitler ordered this changed to "To the state spirit," and all Jewish professors were discharged. The spirit of the famous university was reclaimed after WWII, and Heidelberg is once again a leader among European centers of learning. His Kossel Sandwich is simple, but delicious. If you can not find liverwurst, Braunschweiger sausage can be substituted. Mayonnaise was invented by the Duke of Richelieu in 1757. Kossel added mayo to an old German sandwich. INGREDIENTS: 1 or 2 cooked liverwurst sausages 2 slices rye bread Mustard and mayonnaise PREPARATION: Smear a thin layer of mustard on both slices of bread, then cover mustard with a generous layer of mayonnaise.Cut liverwurst into quarter inch slices, place on one piece then close with remaining bread and serve.
