Cinco de Mayo is this Tuesday, and since Americans love to party, many will be indulging in delicious food and beverages to celebrate Mexican culture. If you don’t have the time or talent to pull off an authentic meal, consider just whipping up a Mexican-inspired dip for the occasion. These three recipes from Food Should Taste Good will have you feeling festive, and they’re also great go-to dishes for any gathering. Red Pepper Pico de Gallo Recipe and photo courtesy of “Food Should Taste Good”/JustAddCheese blogger Michelle Zippelli. Ingredients: Makes 3-4 cups; serves 6-8 people 2 large tomatoes, diced, pulp removed 1 red pepper, diced ½ red onion, diced 2 cloves garlic, minced 2 limes, juiced 1 lime zest 1 large jalapeno, finely diced 1 handful cilantro, finely chopped Salt to taste Pepper to taste Combine all ingredients, mix well, and serve! Flavors will mesh more and more over time. Serve with tortilla chips. Grilled Peach Salsa Recipe courtesy of “Food Should Taste Good.” Ingredients: Makes 5-6 cups; serves 10-15 people 6 fresh peaches, halved and pit removed 2 Tbsp. vegetable oil Salt and pepper to taste 1 large tomato, diced small ½ red onion, diced small 1 jalapeno, seeds removed and diced small 2 cloves garlic, minced ¼ cup chopped cilantro Juice of 1 lime Rub the peaches with vegetable oil and season with salt and pepper. Place peaches on medium-high grill, cut side down, for 3-5 minutes. Flip peaches and grill for an additional 3-5 minutes or until the skin begins to char; remove to plate. Let the peaches sit for 5 minutes, and the skin should release from the flesh. Remove and discard the skin and coarsely chop the peaches. Combine peaches and remaining ingredients in a bowl, toss to combine and chill. Serve with tortilla chips. Queso Fundido Recipe courtesy of “Food Tastes Good”/Tasteseekers Kitchen. Ingredients: Makes 8 servings 1 fresh poblano chile pepper 1 tablespoon olive oil 4 ounces uncooked chorizo sausage, casings removed ½ cup onion, chopped 2 cups shredded Monterey Jack cheese 1 cup shredded queso Chihuahua cheese ¼ cup fresh cilantro, chopped 1 can (14.5 ounces) organic fire-roasted tomatoes, well drained ¼ cup chopped onion 2 tablespoons chopped fresh cilantro 1 clove garlic, finely chopped 1 small jalapeño chile, seeded, finely chopped ¼ teaspoon fine sea salt Heat oven to 475 degrees. Line 15-by-10-by-1-inch pan with foil. Brush poblano pepper with oil; place on pan. Roast uncovered 15 minutes, turning once or until pepper is browned and tender. Place roasted poblano in medium bowl and cover with plastic wrap. Let stand 15 minutes. Peel poblano; discard seeds and membranes. Chop peeled pepper. Heat an 8-inch cast iron skillet over medium heat. Add chorizo and onion; cook until onion is softened and meat is cooked through, stirring frequently. Stir in roasted chopped poblano. Reduce the heat to low. Add Monterey Jack and Chihuahua cheeses and cook, stirring constantly, until fully melted and bubbly, about 2 minutes. Sprinkle with cilantro. In medium bowl, mix can of Muir Glen organic fire roasted tomatoes, 1/4 cup chopped onion, 2 tablespoons chopped cilantro, garlic, jalapeño, and sea salt. Spoon tomato mixture over queso fundido mixture, and serve with tortilla chips.
