Upon the retreat of Pizza Hut from Ashland, this building sat empty for a year until the brave souls of the Heartsong Herbal Brewing Company took over the lease in May. "We were so proud of Ashland when the Pizza Hut and McDonald's went out of business," Says Chai Mama Elizabeth Bretko, "And we're thrilled that local businesses like Heartsong and Premier West are taking their place." After several months of hard work, the Hut reclamation is complete. All of the grease and cheese has been cleansed from the building and the gum and soda have been scrubbed from the walls. Heartsong's office and store are active and the space finally smells like chai! Heartsong began when founder Elizabeth Bretko began brewing in the borrowed kitchen of Evo's Java House in the year 2000. In 2003, she converted the garage at her home in Jacksonville into a commercial kitchen. This is where Heartsong products are currently produced. Heartsong Chai became the Heartsong Herbal Brewing Company in 2004 with the release of the Habanero Honey Brew. "We call it a pepper brew; a tea that's brewed with hot peppers, lemons and honey," explains Chad Derosier, the Chai Guy. "The lemons offer electrolytes to the body while the peppers stimulate an endorphin rush. The result is an energizing, thirst quenching experience." In January 2006, Heartsong unleashed a second pepper brew, the Thai Dragon Tonic. "The TDT," says Derosier, "is a unique concoction of limes, kiwis and hot peppers. It offers an alternative to the Haby Brew, as it's not as spicy and sweeter. I can't stop drinking it." Heartsong currently produces the two pepper brews, four flavors of chai and a line of certified organic loose tea blends. Heartsong products are available along the I-5 corridor from Mt. Shasta, Calif. to Portland, Ore. in stores, restaurants and cafes. Sample all Heartsong brews at the open house style Grand Opening from 4 to 10 p.m. on Saturday Oct. 21 at 2220 Ashland Street. People are invited to tour the brewery, shop in the new Heartsong store, and enter a raffle to win fabulous prizes. Dj's Aaron from the Ashland Food Co-op and Brett from Tibet will be spinning ambient grooves throughout the night.
